Meat Muffins/Meatloaf-- Amy Stearns
1egg beaten
1 c milk
2 c bread crumbs
2 tsp salt
1tsp Worcestershire Sauce
1/2 tsp thyme
1/4 tsp pepper
2 lbs lean ground beef
1 lb ground pork
Topping:
1 c packed brown sugar
2/3 c ketchup
Worcestershire Sauce to taste
Combine egg, ilk, breadcrumbs, salt, thyme, pepper and woo sauce. Mix well. Add beef and pork. Mix well.
Meat Muffins: Pat into 2-2-1/2 inch pans and bake at 350 for 25 min. Carefully drain, spoon topping over and bake additional 10 min or until no longer pink. 16 servings.
(we actually made mini meat muffins- how's that for alliteration- for a party and they were great!)Meatloaf: pat into 2 loaf pans. bake 30-60 min adding topping in last ten minutes and making sure no pink remains.
