So I was a little stressed this weekend... it wasn't a big deal, but I needed an outlet. Hello perfect chance to try a new pie recipe. Now, to be honest I don't have a ton of pie experience. I did make a few pumpkin pies last year when I nixed sugar and used honey (but let's be honest about how well that worked for me- maybe I"ll try it again... maybe... probably not). Ok, so The sister's cafe blog again. Seriously, amazing. even my Super-duper-picky-i-don't-eat-anything boss loved my pie. It was so good!
Pear Almond Pie.
Ingredients:
1 9-inch unbaked pie crust
3 eggs
1/3 cup flour
1 cup sugar
1 teaspoon almond extract
1/4 cup melted butter
3 small pears - peeled, cored, and sliced (or 1 1/2 - 2 large pears)
Preheat oven to 375 degrees.
In a large bowl, combine eggs, flour, sugar, almond extract, and melted butter.

Pour into unbaked pie crust. (I used Pillsbury and cheated, but it was no fail)

Arrange sliced pears in spokes radiating from the center.

Bake in the preheated oven for 15 minutes, then reduce temperature to 350 degrees and bake for 25 to 35 minutes, or until the custard is firm.

Cool completely before serving.
