Goodie-Lusting

YUM! That's all I can say is YUM! I'm fairly certain I just found my go-to recipe for the "Emily wants something sweet and quick show" It's sitting currently outside of my apartment door 'cooling' before I can break into it, but I just licked the pan and the spatula and I'm wishing I wasn't such a good bowl scraper. I bet you're wondering what it is I'm goodie-lusting after. (Yes, I just invented a new term, goodie-lusting.) Here it is:

World's Easiest Peanut Butter Fudge
(now, I know what you're thinking... isn't your family doing a biggest loser food? Isn't fudge BAD for you. Well sure. BUT there's no butter in this recipe, just (a lot of) sugar, and it's SO GOOD!

2 cups sugar
1/2 cup milk
1 tsp. vanilla
3/4 cup peanut butter

Put sugar and milk in pan and bring to a boil. Boil two and a half minutes. Remove from heat and add peanut butter and vanilla. Stir just until mixed well.Pour into greased pan (the smaller the pan, the thicker the fudge will be). Cool and cut.

Simple, Easy, delicious.

Oh Yum. Oh Yum. Oh YUM.-- I wonder if the cold weather outside will make it set faster... Maybe I ought to go check... :)

  1. ok, so at first i thought it said "google-lusting" and i was going to be a little indignant if the credit for coining that phrase wasn't given...then i realized you were talking about food...and i decided to make some of this peanut butter fudge...probably like right now.
